
Roasted Mushroom Antipasti
Mushroom antipasti is one of the simplest and most delicious recipes that can be made in almost any home kitchen. Mushrooms are incredibly easy to prepare, they absorb the flavors of herbs impressively, and become meaty and juicy during the cooking process. They can be cooked using almost any heat source at various temperatures and sizes.
Ingredients
- Mushrooms — any quantity you desire
- Cooking oil — as needed
- Olive oil — for added flavor
- Coarse salt and freshly ground black pepper — to taste
Preparation
- Preparing the Mushrooms
You can use whole mushrooms, but cutting them into halves or quarters is also an option. Personally, I prefer thick slices or large chunks to enjoy the full juiciness mushrooms offer. - Seasoning
- Place the mushrooms in a mixing bowl.
- Add oil (first cooking oil, then a touch of olive oil for flavor).
- Sprinkle coarse salt, black pepper, and any preferred herbs.
- Mix well to ensure the mushrooms are evenly coated.
- Baking
- Arrange the mushrooms on a baking tray lined with parchment paper or with other vegetables.
- Preheat the oven to 180°C (350°F) and bake for 10–15 minutes.
- Check doneness by tasting one or inserting a toothpick—if it slides in easily, the mushrooms are ready.
- For a more roasted appearance, increase the temperature for an additional 5 minutes.
Optional Additions and Enhancements
- Add herbs like thyme, rosemary, or oregano for extra flavor.
- Pair with yogurt, tzatziki, or sour cream.
- Drizzle a bit of honey or balsamic glaze for a sweet-and-savory touch.
Storage and Serving Tips
- Allow the mushrooms to cool slightly after baking before serving.
- Store leftovers in an airtight container in the refrigerator.
- For best results, take them out of the fridge a bit before eating to let them reach room temperature, though they can also be enjoyed cold.
