
Beet Antipasti Slices
Antipasti is a wonderful addition to any meal—healthy, satisfying, and packed with nutrients. Until I first tried beet antipasti, I didn’t know it was even possible! But from the moment I tasted it, I realized how special the transformation is when beet slices, coated in olive oil and herbs, are roasted in the oven.
Ingredients
- Beet: 1 (choose small, fresh ones for easier slicing)
- Cooking oil & olive oil: as needed
- Coarse salt: to taste
- Thyme: 2–3 sprigs
Instructions
- Preparation
- Thoroughly wash the beets and their skins under running water.
- Slice the beet lengthwise in half, then cut each half into medium-sized wedges. From each half, you should get at least 4 slices, depending on the beet’s size.
- For the best results, select smaller beets that yield small, visually appealing wedges.
- Seasoning
- Place the beet wedges in a mixing bowl.
- Add cooking oil first, then a drizzle of olive oil for flavor.
- Sprinkle with coarse salt, freshly ground black pepper, and the thyme leaves stripped from their stems.
- Mix thoroughly until the beets are evenly coated.
- Baking
- Line a baking sheet with parchment paper and arrange the beet slices evenly.
- Bake in a preheated oven at 180°C (350°F) for approximately 45 minutes.
- Cooking time may vary depending on the size of the slices; taste or use a toothpick to check doneness—if it slides in easily, the beets are ready.
Optional Seasoning Additions
- Rosemary: to taste
- Fresh oregano: to taste
- Feel free to experiment with your favorite herbs and spices!
Storage Tips
After baking, allow the beets to cool slightly before serving or storing. I recommend transferring them, parchment paper and all, into an appropriately sized airtight container for refrigeration.
For the best flavor, remove the beets from the fridge about 30 minutes before serving to let them reach room temperature. Alternatively, warm them slightly in the oven for a fresh-out-of-the-oven feel.
