Ingredients:

  • Onion – 1 medium, finely chopped
  • Fresh beets – 3 medium, peeled and grated
  • Carrots – 2, peeled and grated
  • White cabbage – 1 cup, finely shredded
  • Potato – 1 medium, diced
  • Garlic – 2 cloves, minced
  • Water or vegetable stock – 8 cups
  • Salt and pepper – to taste
  • Fresh dill – a small handful, chopped, for garnish
  • Lemon juice – 2 tablespoons (or to taste)

Instructions

  1. Preparation:
    • Wash and peel all vegetables.
    • Chop the onion and cabbage.
    • Grate the beets and carrots using a coarse grater.
    • Dice the potato into small cubes.
  2. Cooking the Base:
    • Heat a pot with some oil. Start by sautéing the chopped onion until softened.
    • Add the minced garlic, stir, and then mix in the grated carrots and beets.
    • Sauté for 2–3 minutes while stirring to release the flavors.
  3. Adding Vegetables and Liquids:
    • Add the cabbage and stir, letting it soften slightly.
    • Mix in the diced potato and season with salt and pepper.
    • Pour in the water or vegetable stock, ensuring all ingredients are submerged.
  4. Simmer and Season:
    • Bring the soup to a boil, then reduce the heat to medium and simmer for about 40 minutes or until all the vegetables are tender.
    • Once cooked, gradually add the lemon juice, tasting and adjusting seasoning as needed.
