Preparation Steps

1. Cutting the Potatoes

  • Potatoes can be cut into various shapes and sizes, or even roasted whole and sliced after baking.
  • Ensure uniform sizes for even cooking.
  • Potatoes can be prepared with or without the skin, but if keeping the skin, wash thoroughly to remove dirt and debris.

2. Seasoning

  1. Place the potato pieces in a mixing bowl.
  2. Add oil—start with cooking oil, then drizzle olive oil for enhanced flavor.
  3. Sprinkle with coarse salt, black pepper, and your choice of herbs.
  4. Mix thoroughly to coat all pieces evenly.

3. Baking

  • Arrange the seasoned potatoes on a baking tray lined with parchment paper.
  • Preheat the oven to 180°C (350°F).
  • Bake for 40–60 minutes, depending on the size of the pieces.
  • Test doneness by inserting a wooden skewer—if it penetrates easily to the center, the potatoes are ready.
  • For a more roasted appearance, increase the temperature for the last 5–10 minutes.

Optional Additions and Upgrades

  • Add herbs like thyme, rosemary, or oregano for added aroma.
  • Serve with yogurt, tzatziki, or sour cream with dill for a creamy touch.

Storing Potato Antipasti

  • Let the potatoes cool before serving or storing.
  • If possible, store them on the parchment paper they were baked on for easy handling.
  • Although pre-cooked potatoes aren’t ideal for refrigeration, potato antipasti can be reheated in a hot oven for a freshly roasted feel.
