Oven Roasted Carrot Antipasti
Roasted carrot antipasti is a surprisingly delightful dish. The roasting process makes the carrots tender and meaty, turning them into a standalone side dish or a flavorful addition to salads, sandwiches, and more. It’s simple to prepare, quick to cook, and works in almost any kitchen with an oven or heat source.
Ingredients:
- Carrots: As many as you like
- Cooking oil: As needed
- Olive oil: For flavor
- Coarse salt and ground pepper: To taste
Instructions:
- Prep the Carrots:
Wash the carrots thoroughly to remove dirt. You can either peel them or leave the skin on, depending on your preference. Cut into sticks, slices, or leave them whole, ensuring uniform sizes for even cooking. - Season the Carrots:
Place the carrots in a mixing bowl. Drizzle with cooking oil and a small amount of olive oil for flavor. Add coarse salt, ground pepper, and optional fresh or dried herbs like thyme, rosemary, or oregano. - Mix Well:
Toss the carrots until evenly coated with the oil and seasoning. - Arrange on Baking Sheet:
Spread the carrots on a baking sheet lined with parchment paper. Avoid overcrowding to ensure even cooking. - Roast:
Preheat the oven to 180°C (350°F). Roast for 10–15 minutes, or until the carrots are tender. Test by piercing with a skewer or knife; if it goes in smoothly, they’re ready. For extra caramelization, increase the heat for an additional 5 minutes, but watch closely to avoid burning.
Optional Additions and Enhancements:
- Add herbs like thyme or rosemary for an aromatic twist.
- Serve with yogurt or tzatziki for a creamy pairing.
- Drizzle with maple syrup for a sweet touch.
Storage Tips:
Allow the carrots to cool after roasting before serving or packing. If storing, you can place the carrots with the parchment paper into an airtight container and refrigerate. Serve cold or bring to room temperature before eating. Alternatively, reheat briefly in the oven for a fresh-out-of-the-oven feel.
